This wouldn't be for me, but sounds like something this group would enjoy. I translated it from a Spanish-language site, but it's not a complicated or particularly exact recipe (and didn't specify the sizes of the cans).
Artichoke and Cod Salad
Ingredients:
Artichoke and Cod Salad
Ingredients:
- 1 Can Artichoke hearts
- 1 Can Piquillo peppers (or pimentos - In the first photo on the page, it looks like a whole pimento and not small enough to be a piquillo)
- A little salt cod, desalted (i.e. soaked in several changes of water to remove most of the saltiness)
- Dressing to taste (vinegar and salt are suggested)
- Drain the artichokes, peppers and cod well.
- Roughly chop everything into more-or-less regular chunks.
- Toss everything together with whatever dressing you wish. The original poster prefers vinegar and salt, but says any other dressing and/or seasoning would be fine.
- If you wish, you may also add other elements, such as imitation crab or some onion.
