This just intrigued me . . . and I am so glad I made it!\
1 1/2 lbs (about 4 1/2 cups) carrots peeled and sliced
1/2 cup mayonnaise
2 TBS finely chopped onion
2 TBS horseradish
salt & pepper to taste
1/2 cup crushed saltine crackers
2 tsp melted butter (I used 2 x this amount)
Preheat oven to 350. Put carrots in a large pot and cover with water. Bring to a boil and cook just until carrots are tender - drain.
Place carrots in an ungreased baking dish (1 gt).
In a small bowl combine mayonnaise, onion, horseradish, salt, and pepper. Mix well and spoon over the carrots.
Combine the crushed saltines and butter - sprinkle over the carrots. Bake uncovered at 350 for 20 to 30 minutes.
Yummmm - these are soooo good.
