  Busy and AWOL

Sorry I haven't been on the forum in so long. Hadn't even realized just how long it had been. The business got busy and then I couldn't log in since I had forgotten that I had changed my forum login to use  a different email address  Fortunately, that's all ironed out  now and I also have some time to get back into the forum as the markets, in general, slow down for the summer.

Right now I have a few things to do, but I'll be back on  later, to catch up a little more and to tell you a little about what's been going on for me, lately.

May I just say . . . mind blown by the party flavors in our mouths!  We did the cover recipe from Issue 130 - Honey Mustard Chicken & Peaches!

OMG!  The flavors were so amazing and I know that we'll do this again, and maybe again and again this summer.  I cut the recipe in half for just the two of us and served it with cilantro lime rice.  Summer flavors to the max!  Basil, peaches, cucumbers, shallots are perfection.   Heart Heart Heart

I'm looking forward to a few more recipes from this issue.

My wife and I are teaming up to cook a Mexican dinner tonight. She's making Roasted Poblanos in Cream Sauce with Chicken Breast (Rajas con Crema y Pollo). I'm making the Mexican Rice from issue #60.

Sorry I've been MIA. Temporarily lost interest in cooking. I need some motivation and some old/new ideas.

We don't eat a lot of beef except for hamburgers and a steak for Ron once a week. Occasionally, I get a taste for a roast beef sandwich. So, will be putting a pot roast in my cast iron dutch oven and cooking it in the basement oven which is the only oven I use in hot weather. I will slice it down and make gravy for "french dip" sandwiches and maybe some tots to go with. A couple of cold ones to round things out. Big Grin

What's everyone got going on today?

We're going to stay home and take it easy.

Dinner is an easy one also, fried chicken, potato salad and corn on the cob.

MMMMMMMMM.  Bob is grilling burgers, we have sauteed onions/jalapenos & bourbon to go on top with tomato & pepperjack cheese.  Tater Tots are in the oven.

Thought about changing plans . . . one of our renters dropped off 2 Dungeness crabs!  Tomorrow!
