I very much would appreciate anyone who has access to tomatillos (and likes salsa) to please, try the following recipe and let me know if you like it. And any ideas for altering you might think necessary.
Charred Tomatillo & Black Bean Salsa
12 oz. tomatillos, husked, rinsed & cut in half
3 oz. onion, cut in 1-inch slices (approx. 1/2 an onion)
4 to 6 medium size garlic cloves, unpeeled
1/3 cup cilantro, rough chopped
1 jalapeno, seeded (if desired) and chopped
14 oz. can black beans, drained
1 T. lime juice
1/2 tsp. sugar
Salt & pepper to taste
On a griddle or in a cast iron pan over medium heat, cook tomatillos, onion and garlic, turning occasionally, until charred and soft. Cool; peel garlic.
In a blender or food processor, pure tomatillos, onion, garlic, cilantro, and jalapeno; pour into a bowl. Add and combine with the tomatillo mixture, the black beans, lime juice, sugar and salt and pepper to taste.
Allow to rest in the refrigerator one hour before using.
Perfectly horrible picture, but had to use the old camera and yadda, yadda, - but wanted you to see the texture.
