Sweet Onion Salsa

4 large plum tomatoes, cored, seeded and diced.
1 jalapeno, seeded and minced
2 green onions, green tops and all, sliced
3/4 cup of diced sweet onions. (I use Walla Walla)
1/2 cup chopped cilantro
1/2 tsp to 1 tsp of minced garlic
1 1/2 Tbl fresh lemon juice and lime juice
1 tsp sugar
1/2 tsp ground coriander and cumin
salt to taste

In a medium bowl combine the tomatoes, jalapeno, green onions, sweet onion, cilantro and garlic. In a measuring cup all the juices and spices and stir until the sugar dissolves, then pour this over the tomato/onion mixture and stir a bit to combine. Chill for at least an hour or two.

This is a greal salsa and the sweet onions are coming soon!

Boy does that ever sound good. I think I would like to try a 'grilled' version of this too. I remember when C@H had a grilled salsa. Not only was that good, but fun to make too!

Great sounding salsa! Grilling would probably make it even more delicious. I love the flavor grilling adds to vegetables!
