Made this last night and it was a hit. The kids loved it. I think one of the better crock pot meals I have made. Labs - this might be a good one for your friend.

Crock Pot Lasagna

Amount Measure Ingredient -- Preparation Method

1 pound ground beef
1 jar spaghetti sauce (26 oz)
1 cup cold water
15 ounces Ricotta cheese
7 ounces mozzarella cheese -- shredded
1/4 cup parmesan cheese -- grated
1 egg
2 tablespoons fresh parsley -- chopped
6 lasagna noodles -- uncooked

Brown meat in large skillet, drain. Stir in spaghetti sauce and water.

In a seperate bowl, mix ricotta, 1 1/2 cups mozzarella, 2 Tbsp parmesan,
egg and parsley.

Spray bottom of crock pot liner with Non-stick spray. Spoon 1 cup meat
mixture into slow ooker; top with layers of half each of the noodles,
broken to fit and
cheese mixture.

Cover with 2 cups of the remaining meat sauce. Top with remaining
noodles, broken to fit, cheese mixture and the rest of the meat sauce.

Cook on LOW 6 hours or until liquid is absorbed. Sprinkle with remaining
cheeses; let stand covered 10 minutes for cheese to melt.

NOTE: For best results, do not cook on High.

Thanks, Erin. Shall have to give it a try. He's a big fan of lasagna, and really loved the one I made the last time, but that's for a regular oven.
If blueberry muffins have blueberries in them, what do vegan muffins have?

I've recently been thinking about getting a crockpot. It'd be nice once in a while. This kind of recipe is making me think more seriously about getting one. What size would I need for something like this? We are only two now, but I guess leftovers would be okay, in the case of lasagna

This sounds really good! I will be sending this along to DD at school! I need to let her have my crockpot since I never use it. I only got the thing when the kitchen remodel was going on and I didn't have anything to cook on except that and the grill. That was a challenging couple of months!

Thanks for sharing this Erin, I passed it along to my daughter who loves using her crockpot. I have to save it for myself, I had to leave mine back in Missouri. I knew I would miss it. waaah.

Cis, I used to have a Rival crockpot and thought it was ok. Then I bought the Cuisinart slow cooker and I love it so much more. The only drawback is that it is large. But it cooks so well. I look forward to being reunited with it among other things!

Just as an aside, in the summer I put the slow cooker on the deck so it doesn't heat up the kitchen.

Cis, mine is some kind of generic 4-qt from Walmart. I just lvoe it for days I just don't have time to play. I have a super duper one that is way too big for just the two of us, so don't drag it out very often.

I have always been leery and kind of snobby about slow cookers (don't ask me why???), but I trust you guys and if Erin says it's good, that's good enough for me.

This'll be on the menu one night next week.
