We are having our 2nd Annual Chili Cookoff at our family reunion September 11-13. One of my nieces asked me for my my favorite chili recipe 'cause she just "KNEW" Uncle Bill would have a fine one...surprise, surprise...I don't! Would y'all be willing to share your favorite recipe with me please? I like chili with and without beans. Please help!

Here are my two favorites, Billy. The first one is an old family recipe and it's in a Chef's Journey...Home, page 65.

The other one is a white chili - meaning turkey instead of beef and it's very good. Gave it to someone on C2C a few years ago and she won first place with it in a contest.
I'm posting it with the added notes also.

TURKEY CHILI WITH WHITE BEANS

1 tablespoon vegetable oil
2 medium onions -- chopped
1 1/2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1 1/2 pounds lean ground turkey
1/4 cup chili powder
2 bay leaves
1 tablespoon unsweetened cocoa powder
1 1/2 teaspoons salt
1/4 teaspoon ground cinnamon
1 can whole tomatoes -- (28 ounce)
3 cups beef stock or canned beef broth
1 can tomato sauce -- (8 ounce)
3 cans small white beans -- (15 ounce) rinsed, drained
Chopped red onion
Chopped fresh cilantro
Plain low-fat yogurt or light sour cream

Heat oil in heavy large pot over medium heat. Add onions; sauté until light brown and tender, about 10 minutes. Add oregano and cumin; stir 1 minute. Increase heat to medium-high. Add turkey; stir until no longer pink, breaking up with back of spoon. Stir in chili powder, bay leaves, cocoa powder, salt and cinnamon. Add tomatoes with their juices, breaking up with back of spoon. Mix in stock and tomato sauce. Bring to boil. Reduce heat; simmer 45 minutes, stirring occasionally.

Add beans to chili and simmer until flavors blend, about 10 minutes longer. Discard bay leaves. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium-low heat before continuing.)

Ladle chili into bowls. Pass red onion, cilantro and yogurt separately.

chefCJ - Jean, thanks so much for this recipe. They raved about it and I had to pass the recipe onto everyone. I thought it could have had a bit more heat to it - personal preference - but it worked so well as my friend (who is expecting) cannot eat anything too spicy, so it worked very well.

Do you want to know the result? I won! The prize was a grocery gift certificate. Your recipe is really good. Who would have thunk of using cocoa powder, and cinnamon for chili.

I made some changes in the recipe not because I intentionally want to, but by either pure accident, or use what ever is available.

What I changed were:
-seasoned white beans because the store do not have plain white beans.
-added 1 cup of chicken broth because I have some left and don't want it go bad.
-add in 1 green pepper 'cause it was sitting there and was very lonely and I thought, what the hey.. so I cut it up and tossed it in.
-1/3 C. of chili powder instead of 1/4 C 'cause I couldn't find my quarter measuring cup and don't want to use any other bigger cup and 1/3 c. was available. What the hey..the more the merrier.
-additional salt.

I didn't eat any of it last night because it was getting late,and knew it was good from the little taste here and there. But, after the judging and I had a bowl, boy, was it good..delicious. EVERYONE was raving about it.

I get so bored making the same chili all the time, but this is one that I've come back to often and it would be easily adapted to a slow cooker, I would think.

Billy, my new favorite chili is Deva's chili as Jean mentioned. Everybody likes that one. But, from time to time, Ron will ask for his grandmom's chili, so I still make that one as well. It is also in "A Chef's Journey Home" on page 168. For anyone who doesn't have their copy yet, here is the recipe.

Ron's Favorite Chili

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound lean ground beef or turkey
1 large onion -- chopped
1 28 oz. tomatoes in juice -- chopped
2 15 oz. tomato soup
2 15 oz. kidney beans or chili beans, any variety
2 cups water
1 T. chili powder
1 T. sugar (I use brown sugar)

Brown meat and onions, drain fat. Add remaining ingredients and simmer or an hour, stiring occasionally to avoid sticking. Add water to thin as needed. Can be put into crockpot and left for 7-8 hours on low.

Description:
"Grandma Murray's Recipe"

NOTES : This is a mild version that small children seem to like. Additional chili powder and/or other spices can be added for more "heat."

I usually put a lot more in as well, in fact I like to put cumin, chipotle pepper, and some cayenne in it too. But, I only put that in if it's just the two of us that will be eating it. If there is any chance of grandkiddies being over, I leave that out and we just add some hot stuff at the table.

TEXAS CHILI

2 cans (14.5 oz) chopped tomatoes
2 green or red chili peppers, chopped
1 t salt
dash--black, white, cayenne peppers, garlic & onion powder (each)
1 bay leaf, crumbled
Simmer 20 min in a large stock pot, stirring occasionally. Set aside

2 lbs lean ground beef
1 1/2 lb lean ground pork
3 large garlic cloves minced
2 med onions, chopped
2 C beef stock
1 12 oz can dark beer
1 8oz can tomato sauce
1 T paprika
1 T ground cumin
1/2 C chili powder (ancho, if available)
1 T ground oregano (Mexican, if available)
1/2 t onion powder
1/2 t garlic powder
salt & pepper to taste

cook meats in an iron skillet with onion and garlic until nearly dry. Add to tomato mixture in large stockpot. Add all other ingredients. Simmer covered until chili is reduced to about 3/4 (3 to 4 hours). Stir occasionally.

I like to add masa or flour, dissolved in water, if it needs thickening (the masa adds terrific flavor) -2T in 3T water.

Serves 6 to 8 , more if served over rice. Chopped fresh onions are a great topping!!

Edited to add-- serve over fritos for lunch--we call that "frito pie". Have pico de gallo with it and guacamole on the side! Symphony of spicy flavors--OMG. Woodwinds, brass, percussion--life is good.

Now, THAT's what I'm talking about, Bill! REAL chili!

Oddly enough, I've never used a recipe when I've made chili, but that recipe is close to what I usually put in. The biggest differences are that I don't use beer in it (does sound good, though), DO add several kinds of fresh chiles (incl. jalapeños, poblanos, and finger hots), and I also add allspice. No measurements for anything, though - just according to my mood at the time. Of course, the main thing is: NO BEANS!
If blueberry muffins have blueberries in them, what do vegan muffins have?
