This is a very tasty meal, versitile. The chicken with the marinade and just the mustard sauce is really good. But with the salsa just fantastic. Kind of a funny combination but it all works. I have used chicken breasts and boneless/skinless thighs. Both are good. The mustard sauce is good drizzled on vegies and hubby finished it up this morning with various leftover meats dipped in it !

MACADAMIA-MANGO CHICKEN

Serving Size : 6 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup soy sauce
2 garlic cloves -- minced
1 tablespoon brown sugar
1 tablespoon olive oil
1 teaspoon grated fresh ginger
6 skinned and boned chicken breast halves
MUSTARD SAUCE:
3 tablespoons macadamia nuts chopped
MANGO SALSA:

COMBINE first 5 ingredients in a shallow dish or heavy-duty zip-top
plastic bad; add chicken.. Cover or seal and chill 1 hour, turning once.

REMOVE chicken from marinade discarding marinade.

GRILL, cover with lid, over medium high heat (350 to 400) 6 minutes on
each side or until done. Drizzle with Mustard Sauce; sprinkle evenly with
nuts. Serve with Mango Salsa.

MANGO SALSA:

2 ripe mangos ( about 1 pound) -- peeled and diced
1 medium-sized red bell pepper diced
1 jalapeno pepper -- seeded and diced
3 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh mint
1 small red onion -- chopped
2 tablespoons honey
1 tablespoon fresh lime juice
1/4 teaspoon ground red pepper
1/4 teaspoon salt

MUSTARD SAUCE:

1/2 cup Dijon mustard
2 tablespoons light brown sugar
2 tablespoons pineapple juice
1/2 teaspoon ground red pepper -- (1/2 to 1/4)

STIR together all ingredients; cover and chill up to 8 hour, if desired.

Sounds yummy Erin. Thanks for sharing this one. If this is anything like the last one you shared from a triplet mom (the Pasta Cobb Salad, I think), it's bound to be a winner.

Pasta Cobb Salad

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 1/2 cups garden style twirls - 12 oz
4 slices cooked bacon -- crumbled
2 cups cooked chicken breast halves -- cubed
1 1/2 cups fresh tomatoes -- chopped
3/4 cup Italian salad dressing
3/4 cup frozen peas -- thawed
1/3 cup green onion -- sliced
1/2 cup crumbled bleu cheese
1/2 cup fresh parsley -- chopped

Cook pasta according to package directions. Drian. Rinse with cold water to cool quickly and drain well.

In a large bowl, stir together the cooled pasta and remaining ingredients.

Serve immediately or cover and refrigerate.

You should have seen the mangoes I saw in the market, this morning. They had to be at LEAST a pound each - maybe two. I'll have to see if I can find any macadamias here. If not, I'll have to use cashews, instead. Sure sounds like a winner!
If blueberry muffins have blueberries in them, what do vegan muffins have?

I don't have a good answere for you. I made it about 2 hours ahead last night, and it was starting to get pretty juicy - but it was still very good and all was still firm. I have some left over, but haven't tried it today. I'll let you know how it has held up.

I hope everyone enjoys it - it is a great summer meal.
