Cheap & Dirty Slow Cook Dinner

Needed an easy dinner a few days ago so I just started pulling from the pantry and we were both surprised at how good this 'soup' was - it was supposed to be a casserole kinda dish, but it turned into what it wanted to.

In the 'pot' mix together -
can cream style corn
can Rotelle tomatoes
can Black beans, drained and rinsed
can mushroom pieces, drained
pkg. frozen spinach, thawed

then push 3 or 4 chicken thighs into the mixture to cover. Cook for 8 hours. The chicken came completely off the bones and I just removed them and used a fork to break up the chunks of chicken. Added a little taco sauce and we ate like mad!!
