Ingredients:
- 6 Ears Corn, reserving husks and silk
- 8 Sprigs Fresh cilantro, chopped
- 1/2 C Vegetarian broth concentrate
- 2 Qt Water
- Salt and freshly ground black pepper as needed
- 2 TBS Cilantro, chopped
- 1/4 C Gin
- Remove kernels from corn cobs and reserve.
- Place cobs and reserved husks and silk in a saucepot with broth concentrate and water. Simmer 15 minutes. Strain liquid into another pot.
- Add kernels to strained liquid and simmer 7 to 9 minutes. Strain, reserving liquid.
- Purée corn kernels, adding reserved cooking liquid as needed to blend. Strain purée. Season to taste and reserve liquid to cool.
- Add chopped cilantro and gin to liquid and serve.
