White Fruit Cake

1 pound butter
1 pound sugar
6 large eggs
1 pound flour
2 tablespoons nutmeg
1/2 pint sherry
2 tablespoons rose extract
1 teaspoon bitter almond
1 1/2 tablespoons vanilla
1 1/2 pounds citron
1 1/2 pounds shelled almonds
1 1/2 pounds white raisins
1 pound crystallized pineapple
1 grated cocoanut
Almond Paste for Fruit Cake
1 pound almonds
1 cup sugar
1 large egg white
1 teaspoon almond flavoring

Cut the citron and pineapple into small pieces. Blanch and grind the almonds. Mix together the citron, almonds, raisins, pineapple and cocoanut and sprinkle with a portion of the flour to keep the fruit from sticking together.

Cream the butter and sugar, add a little of the flour, then the eggs, beaten in one at a time, the spices and flavorings. Add the floured fruit, mix thoroughly, using your hands if necessary, turn into deep loaf pans lined with oiled paper. Bake in a slow Oven--250°--for about three hours.

When cold, cover the top of the cake with Mary Leize Street's almond paste, spreading it about one inch thick. Then frost the cake all over with a boiled icing.

Almond Paste: Blanch almonds and put through a meat grinder. Boil sugar with a little water (1/4 cup) until the syrup spins a thread. Pour on the beaten egg white and stir in the almonds. Flavor, and spread on top of cake, covering whole with boiled icing. The quantity may be doubled for a large cake. This paste on your fruit cake adds twice the value to the richness of the whole.---Mary Leize Street
