Here's an interesting-sounding recipe I discovered while searching for something else.

Pavo al Tequila (Tequila Turkey)

Ingredients:
  • 1 Turkey (11 Lbs)
  • 2 Cups Tequila
  • 2 Cups Milk
  • 1/4 of an Onion
  • 3 Cloves Garlic
  • 8 Bay leaves
  • 6 Sprigs Fresh thyme (or one tablespoon ground)
  • Salt
  • Pepper
  • Oil
Day-Before Instructions:
  1. Rinse and dry the turkey.
  2. Place the turkey into a deep container and inject the Tequila into the turkey using a flavour injector.
  3. Puree together the milk, onion, and garlic (literally, the instructions say to beat these together with a beater, but pureeing with a blender seems to make more sense).
  4. Bathe the turkey with the milk mixture.
  5. Season the turkey with salt and pepper, to taste.
  6. Add the bay leaves and the thyme to the sauce.
  7. Allow the turkey to marinate for 12 hours, turn it over, and let it marinate another 12 hours (this way, the whole thing gets marinated).
Cooking-Day Instructions:
  1. After a total marinating time of 24 hours, preheat the over to 425F.
  2. Remove the turkey from the container and tie together the legs and wings (with non-shredding string).
  3. Rub oil onto the turkey and place it into a roasting pan.
  4. If you wish, you may stuff this turkey however you like.
  5. Roast the turkey for about 3 hours, 45 minutes (about 20 minutes per pound).
  6. When the turkey is done, remove it from the oven, cut and remove the string from the legs and wings, and serve.

Hmmm...wonder how the rest of the recipe would be without the turkey. LOL!

Seriously: I'm sure this could be scaled down for chicken. It DOES sound tasty, though.

My mom used to "brine" her chicken in buttermilk. That's not exactly the same, though. I think the tequila injected poultry would be really tasty....

That sounded odd to me, at first, as well, but then I thought of how wonderful Chicken with Leeks and Cream is, and how this combines milk with garlic and onions, and it didn't seem so strange.

I do one very similar to this with chicken, only the herb I use is cilantro instead of thyme.

It's very juicy and flavorful. The milk by the way cuts the tequila so it doesn't cook it and removes impurities in the meat.

I just happen to have a 12 lb turkey in my freezer too and since I'm gonna have to cook it since we're getting a new freezer and the old one has to go bye bye a couple of days before the new one comes this is a perfect opportunity.
