I am making Chilis Rellenos tonight!

With your easy instructions and a some internet research, I hope it will be a success. It seems easy enough, I will give it a try!

If they are any good, I will post lovely pictures of these beauties. And if they are bad... Oh well, at least I had fun doing it.

Laura they are so easy - especially if you don't try the dip and drop method of frying. Of course once you make them you'll want them a lot. You will need 2 spatulas to turn them. Have fun.

This does sound very easy. I am sure the ones that I had were diped and deep fried. But I think yours look really great.

I went and got poblanos and anaheims. I am a total amateur at this. We really haven't had any southwest ingredients in these parts until recently. So these are (or at least used to be) a rarity. The anaheims are about 6-7" long and the poblanos are 4-5" long. Pretty good size I think.?

This really was just as easy as frying fish!

First I roasted the peppers:

Then I peeled and deseeded them.

Then I stuffed them with cheese, rolled and floured them:

Then I whipped the egg whites and yolks separately:

Then folded that mixture together into one lovely batter:

Then I fried them in my cast iron skillet (excuse my mess):

Then I plated it and served it with a red sauce and some salsa verde:

These were soooo good and really easy to make. We had fun and now my hubby has a wonderful lunch for tomorrow!

I am so happy!!!! They look absolutely beautiful! I'm drooling.

Now I will try to figure out the recipe for the sauce my friend from Nogales taught me. There'll be peppers in our future this weekend so I can do that and share it with you. It is perfection on chile rellenos and on huevos rancheros.

Anxious to hear about the sauce, Sharon - I've never found a chile rellenos sauce that I'm really happy with.
