I am making fish tacos tonight and foolishly decided to make my own slaw dressing. I used vinegar, lime juice, evoo, and cilantro. It is far too tart, and normally I can drink vinegar from the bottle. Can I save this by adding something?

Would maple syrup be too weird?

How bout some plain old sugar and a bit of chili sauce? The lime juice is your problem child there....

can I just sprinkle the sugar onto the slaw? I noticed most recipes have you cook the dressing first, I imagine to disolve the sugar.

Here's you a really good Cole slaw. It can be a little spicy depending on how much cayenne you put in the Jerk Seasoning, Dry.

Jamaican Cole Slaw

Amount Measure Ingredient -- Preparation Method

4 cups shredded cabbage
3/4 cup shredded carrots
1/2 cup chopped nuts -- optional
1/2 cup mayonnaise
2 tablespoons sugar
1 tablespoon cider vinegar
2 tablespoons Dry Jerk Seasoning
Dry Jerk Seasoning

Combine the cabbage, carrots, and nuts in a large bowl; set aside. Mix together the mayonnaise, sugar, vinegar, and seasoning. Spoon over cabbage mixture. Toss well. Cover and chill before serving.

Jerk Seasoning, Dry

Amount Measure Ingredient -- Preparation Method

1 tablespoon onion flakes
1 tablespoon onion powder
2 teaspoons ground thyme
2 teaspoons salt
1 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 teaspoons sugar
1 teaspoon coarsely ground black pepper
1 teaspoon cayenne pepper
2 teaspoons dried chives

Mix together all ingredients. Store in a tightly closed glass jar. It will keep its pungency for over a month.

Thanks, Roxanne! I added just a tablespoon of sugar and it is wonderful now. Phew. I did not want to throw the whole thing out at this point.

Thanks for the coleslaw recipe, Billy. I have it copied now, but for today I had to doctor up the mess I made earlier. Waste not and all.

Baking soda may also help, if the problem is that the lime juice made the mixture too acidic. Only try a little, at first (don't forget it will foam), and probably try it on a small sample, rather than in the whole recipe. That way, you can judge if the baking soda is helping in the way you would like.

As for Jerk - here's a wonderful recipe I have used (not dry, though):

Next to reggae music, "Jerk" style cooking is Jamaica's most famous export to the world.

INGREDIENTS:
1/2 cup pimento( allspice berries)
1/2+ cup packed brown sugar
6-8 garlic cloves
4-6 Scotch bonnet peppers
1 tablespoon ground thyme or 2 tablespoons thyme leaves
1-2 bunches escallions (green onions)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
salt and pepper to taste
2 tablespoon soy sauce to moisten

METHOD:
1.Put content in a food processor or blender and liquefy
2.Pour sauce in a Jar and keep refrigerated.
3.The sauce will keep forever if kept refrigerated
4.To increase spiciness blend pepper and pimento and add to sauce the hot peppers at any time.

Seasoning Instruction for Chicken
Leave skin on chicken
Rub the meat (chicken, pork or beef) with the seasoning.
With chicken, be sure to rub under skin and in cavities
Marinate overnight.

Seasoning Instruction for Pork or Beef
Rub the meat. If using a pork shoulder, make shallow cuts and rub in.
Marinate overnight.

Seasoning Instruction for Fish
Can also be used with fish, but use a "steak fish" like grouper, dolphin, king
Marinate overnight.

Cooking Instructions
Grill at lowest possible setting over a low fire until done.
Pimento (all spice) branches (this is what is used in Jamaica) mixed with charcoal is best. If not try to use an aromatic wood in the barbecue grill to enhance the flavor.
Chop meat into pieces, and serve traditionally with hard-dough bread

Coleslaw dressing is usually a sweet & sour one, so you definitely needed sweet in this (honey, since your other "sour" was lime juice, would have worked as well).

You must try BJ's Jamaican coleslaw recipe! I made it for a party last summer. I always make tons of food, but only a few spoonfuls of this were left over.

Sometimes you can just add shredded carrots to a slaw like that and they will sweeten it up nicely. Sounds wonderful though.

Now who in the world did I give my Jamaican Jerk cookbook to? Can't remember, but the coleslaw and the Dry Jerk Seasoning is from that book. I have a Jerk Rub and a Jerk Marinade (I think) if someone wants them.
