Shrimp Toasts

from Holiday Menus - makes 28

Brush with melted butter:
7 slices Texas toast-style bread, crusts removed
Mash; stir in:
8 oz. cream cheese, softened
2 egg yolks
1 tsp. fresh lemon juice
1 1/2 cups cooked shrimp, chopped
1/4 cup red bell pepper, diced
1/4 cup scallions, sliced
Salt & cayenne to taste

Preheat oen to 400 F. Line a baking sheet with foil.

Brush 1 side of eah bread slice with butter; cut into quarters.

Mash cream cheese, yolks, and lemon juice together in a bowl with a fork until smooth. Stir in shrimp, bell pepper, scallions, salt & cayenne.

Mound about 1 T. shrimp mixture on eah piece of bread, then bake on the prepared baking sheet until puffed and golden, about 20 min.

C@H note: Use a #100 portioning scoop or a tablespon to mound shrimp mixture on top of buttered toasts.

I am making this recipe AGAIN for company on Friday! It is very easy, very good and guests are very impressed!

Probably the egg yolks.

Cis, I don't know, but I think labs may be right. I had an old mashed potato casserole that used a small package of cream cheese, egg yolk, and chive that puffed. BUT, I also think the cream cheese has a little to do with it, too. Think about a cheesecake.

Even more, think about a soufflé, omelet, Yorkshire pudding, etc., or even just the difference an egg makes in a cookie dough.
