Banana Ginger Jam Recipe

Ingredients for 6 - 250 g (9 oz.) jars
- 2 kg (4 1/2 lb.) ripe Bananas (1.2 kg / 2 lb. 10 oz. peeled weight)
- 1.2 kg (2 lb. 10 oz.) granulated sugar
- 1 piece of fresh Ginger
- 1 lemon (Juice of the lemon)

Method

1. Peel the bananas and weigh the net result.
2. Add an equal weight of sugar and the lemon juice.
3. Finely chop the ginger. Mix it into the banana mixture.
4. Simmer for about 30 minutes, stirring often, until the sugar is completely dissolved. The consistency should be fairly thick.

Finishing

1. Pack into sterilized jars.
2. Close tightly and place upside down until completely cooled.
3. Label and cover with parchment paper.

Marie Sharp's, a company in Belize, makes a banana jam that is out of this world. Since Belize is on the Western border of Honduras, Marie Sharp's also markets their products here.

Aside from various hot sauces, they also have the following types of jams and jellies:
  • Green habanero jelly
  • Green mango chutney
  • Red habanero jelly
  • Guava jam
  • Papaya jam
  • Banana jam
  • Mango jam
  • Pineapple jam
  • Coconut spread
  • Orange marmelade
  • Orange jelly
  • Tropical mixed fruit jam (contains papaya, pineapple, banana, mango, and orange)
So far, I've only had the banana and the papaya, but I'm sure they're all good.

The banana jam was quite surprising. The consistency was almost like apple butter and, in a way, so was the taste, but it was definitely banana and not apple. I'll have to give this recipe a try (probably in wax-sealed glasses, then frozen, since I don't have any regular canning equipment or jars).
