Another winner from the Tonight Grilling book - I only used 1 T. of the chipoltes because it can really take over a dish and for us it was perfect, just a hint of a kick, but could taste everything else.

Billy, I just can't figure out why you're not getting enough of a smoke for your beans. I left these in for little over 2 hours and they really had a smoky flavor. You don't cover your beans, do you? I don't and I also spray with apple juice/water every hours to keep the top moist.

Bob told me he was stirring the beans so that the smoke would be even. Now he's trying to figure out if there's a way to use my 'StirChef' in the smoker to keep stirring them without opening the door. I have my doubts I think the heat would be liable to "smoke" the StirChef. Apple juice is a good idea too.
You only live once . . . but if you do it right once should be enough!
