Don't know if I've ever posted this, but I love this pudding!!!


CHOCOLATE TAPIOCA PUDDING

2 cups milk
1/2 cup honey
1/4 cup quick-cooking tapioca
1/2 cup chocolate morsels -- semi-sweet, bittersweet, whatever you prefer
1 tsp. vanilla

In a medium saucepan, combine milk, honey and tapioca; let stand for 10 minutes.
Bring mixture to boil over medium-high heat, stirring frequently; cook & stir 3 minutes.

Remove from heat; add chocolate morsels and vanilla, stirring until chocolate is melted and mixture is smooth. Serve warm or chilled.

This is such a wonderful easy wintertime dessert. You might even want to add a splash of rum, Kahlua, or your favorite liquor.
or a pinch of cayenne!!

Ooooo, that's going to be just perfect for this weekend, rainy and chilly forecast. And guess what, I just found some pearlized tapioca that I picked up at the bulk food place. It's a little old but I bet it'll work.
