Made the Coconut-marinated Chicken kebabs with Pineapple Rice last night. This was from Weeknight Grilling - the first one.
I thought it was very good and pretty easy. We used all the jalapeno and close to all the red pepper flakes in the rice. It was plenty zippy - but not too hot (but we like spicy) and it paired with the sweetness of the pineapple in the kebobs. My hubby who is not a huge grilled Pineapple or coconut milk fan (unless it is curry) would probably rate it a 7, I would rate it a 8.5. Will probably make again.
