I've had a hankering for these, Eggs In Purgatory, from The Sopranos Cookbook
Uova in Purgatorio - serves 4
1 garlic clove, lightly crushed
2 T. olive oil
2 c. canned tomato puree
4 fresh basil leaves, torn into pieces, or a pinch of dried oregano
Salt and pepper
8 lg. eggs
1 T. freshly grated Pecorino Romano or Parmigiano-Reggiano
In a medium skilet, cook the garlic in the oil over medium heat fore about 2 minutes, or until lightly golden. Add the tomato, basil and salt and pepper to taste. Bring to a simmer and cook for 15 minutes, or until the sauce is thickened. Discard the garlic
Break an egg into a small cup. With a spoon, make a well in the tomato sauce. Slide the egg into the sauce. Continue with the rmaining eggs. Sprinkle with the cheese. Cover and cook for 3 minutes, or until the eggs are done to taste. Serve hot.

Ummmmmmmm, that sounds good. Did I ever post my recipe [I got it from someone...It's sleeting right now at 43°F..it's about the size of peas and Buddy is just laying out in it happy as a clam..it's getting bigger] for eggs in chopped tomatoes? It's wonderful. I'll look it up.

Baked Eggs with Tomatoes

4 tablespoons olive oil
1 small onion -- finely chopped
1 pound tomatoes, peeled and seeded -- chopped
2 tablespoons chopped fresh basil
6 large eggs
salt and freshly ground black pepper
1 tablespoon butter
Heat the oil in a shallow flameproof dish. Add the onion, and cook until soft and golden.
Preheat the oven to 375°F. Add the tomatoes to the onions, and cook for 5--10 minutes, or until the tomatoes are very soft. Stir in the chopped basil.
Break the eggs, one at a time, and slip them into the dish in one layer on top of the tomatoes. Season with salt and pepper. Dot with butter. Cover the dish, and bake in the oven for 7--10 minutes, or until the egg whites have just set, but the yolks are still soft. Serve at once.
Variation: Sprinkle 2--3 Tbs of freshly grated Parmesan cheese over the eggs before baking for a richer, tastier dish.

NOTES : These eggs simply baked over a fresh tomato sauce make an easy dish for a light supper or breakfast.

There's a Sopranos Cookbook? I'll have to take a look at that. I'm an avid Sopranos fan.
We just had cold cereal with strawberries and banana slices. Kind of boring.

My SIL bought the cookbook as a joke. Turns out, it is great. I've made many of the dishes in it, and, if you you're a fan of the show,the stories are fun to read. I bought an aquaintance
a used copy online for a few dollars.
