LJ, here is the recipe. I have never found dark orange marmalade, so I just buy regular marmalade. Works great. This dish is so good, I always wonder why I don't make it more than once a year? After St. Patricks day I always say I am going to, then a year goes by and here I am again. I also included the Browned Basil New Potatoes, and I usually complete our menu with steamed or roasted brussel sprouts.

Anyone else have any favorite St. Patricks Day recipes?

Glazed Corned Beef

3 pounds corned beef brisket
1 cup dark orange marmalade
4 tablespoons dijon mustard
4 tablespoons brown sugar

Place corned beef in a large pot and cover with boiling water.

Bring to a boil, lower heat , cover pan partially and simmer as slowly as
possible for about 3 hours. or until very tender when tested with a fork

Preheat oven to 350 degrees. Mix marmalade, mustard and brown sugar
together in a small bowl.

When meat is done, remove from pot and drain. Place meat in ovenproof
dish and pour marmalade mixture over it, coating thoroughly.

Bake corned beef for 30 minutes or until glaze is crip and brown.

Note: After boiling and draining I always trim the meat of it's fat before putting in the dish with the glaze.

Browned Basil New Potatoes

2 1/2 pounds red new potato
2 tablespoons vegetable oil
1 1/2 tablespoons garlic -- minced
1/3 cup shredded fresh basil
1 teaspoon ground black pepper
1/2 teaspoon salt

cook potatoes in boiling water to cover 15 to 18 minutes or until tender.
Let cool to touch, quarter potatoes and set aside.

Heat oil in a large nonstick skillet over mediumm-high heat. Add
potatoes and garlic, saute 5-10 minutes or until potatoes is browned

Sprinkle with basil, pepper ad salt, toss gently. Serve warm

Thank you Erin...never heard of "dark orange marmalade" so I would do the same.

I have noticed that the big "Super" Target Stores with the FULL grocery sections have some "unique" jams, jellies and marmalades so I will check them out the next time I am in Des Moines.
