All this talk of peanut butter and the fact that I owe my little neighber (whose rugby game we went to last week) a batch of cookies, plus youngest son needs a birthday care pkg. got me to make an old family favorite. When the kids were in grade school, the time when schools actually made their own goodies, these were on the cook's menu. Everyone in the neighborhood whined for the recipe till she gave it to all of us and we've made them ever since.

Can't remember if I've posted this before or not - if so, just keep going with another post....

PEANUT BUTTER CHEWS

Recipe By: the cook at Willow Glen Elem. school - 1970s

1 cup shortening
2 cups peanut butter
2 cups sugar
4 large eggs
2 teaspoons vanilla
2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups rolled oats (oatmeal)
1 cup brown sugar

Combine shortening through vanilla and blend thoroughly.
Add flour through brown sugar and mix together.

Dump out on a cookie sheet that has an edge. This can be spread with a rolling pin, or butter your hands and push out to edges of sheet.
Bake at 350° for 20-25 min.

If desired can be frosted with mix of powder sugar, water & vanilla. (but doesn't need it!)

Alternative - Cookies instead of bars:
Use a scoop (I used a large one for giant cookies)

Bake at 350° - for larger cookies/20 min. smaller cookies/6-10 min. depending on size.

My cousin gave me this recipe several years ago, they were called "Health Bars", of all things.

Very good, though. I suppose the benefits of the 1.5 c of oatmeal outweighed the cup of eggs, shortening, 2 of peanut butter and sugar.

My faves are the ones my mother, then I, have been making for years. They taste like "Butterfinger" bars!

Scotchy Peanut Bars

Ingredients
  • 2/3 C Butter
  • 1/2 C Brown sugar, firmly packed
  • 1 1/3 C Flour
  • 1 C Sugar
  • 1 C Light corn syrup
  • 6 Oz Butterscotch morsels
  • 12 Oz Peanut butter
  • 3 C Corn flakes
Instructions
  1. Cream butter and brown sugar well.
  2. Blend in flour.
  3. Press into bottom of ungreased, 13x9x2” pan.
  4. Bake at 350° for 15 to 20 minutes.
  5. Combine sugar and corn syrup in medium saucepan. Bring to a boil; remove from heat.
  6. Add butterscotch morsels and peanut butter. Stir until melted.
  7. Stir in corn flakes.
  8. Spread over base in 13x9x2" pan. Cool. Frost with the following frosting.


Frosting

Ingredients
  • 1 T Butter, melted
  • 1 C Confectioner’s sugar
  • 1 Oz Semisweet chocolate, melted
  • 1 t Vanilla
  • 1 – 2 T Milk
Instructions
  1. Mix all ingredients except milk.
  2. Stir in milk until spreading consistency.


When I first had these, and noticed just how much they were like "Butterfinger" bars, I took a look at the ingredients on the wrapper of a Butterfinger. Well, you know what gives them that wonderful, layered crispiness? "Confectioner corn flakes"! So this recipe is even closer than I had imagined!
If blueberry muffins have blueberries in them, what do vegan muffins have?

The boys love Butterfinger's, Labs. . . .thanks for posting this. Have to make cookies tonight or tomorrow and will make and give 'em a try. Will let you know how they go over!

Don't fret it. Try reading some John Knox in the original, Scottish dialect of the older English some time. There, it's "nychtbour."
