Ok I'm flipping out. I used to have a great pomegranate vinaigrette recipe. I cannot find it anywhere!! I have searched the internet far and wide and none of them look familar. Sheesh how hard can it be?

Do any of you have a tried and true recipe for it? I have this big dinner party tomorrow I'm doing and need that for the salad.

I know vinaigrettes are very easy to make...but I just cannot seem to get the balance right on them so they taste good. Lol even had this problem in school.

Sorry, Denise, I can't help you either, but I have the same problem you do-I'm vinaigrette balancing deficient, I guess

Go back to your pasta, I'll look around a bit for you.

Denise, This really is not at all what you are looking for. It is just a good viaigrette we tried (that someone here posted). I often just make an olive oil, orange juice shallot vinaigrette (I just wing it) toss with greens and add pomegranate and apple to it, balsamic too.

Apple, Walnut, and Mixed Greens Salad with Zinfandel-Cranberry Vinaigrette

Amount Measure Ingredient -- Preparation Method

1 cup sweetened dried cranberries (such as
Craisins)
3/4 cup apple juice
1/2 cup zinfandel or other fruity dry red wine
1/2 cup cranberry juice cocktail
3 tablespoons minced shallots
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon walnut oil
10 cups gourmet salad greens
3 cups cubed Gala apple (about 2 apples)
1 cup thinly sliced Walla Walla or other sweet
onion (about 1 medium onion)
1/3 cup coarsely chopped walnuts -- toasted

Combine cranberries and apple juice in a medium saucepan; bring to a boil. Remove from heat; let stand for 10 minutes. Drain cranberries; discard apple juice. Set cranberries aside.

2. Bring wine and cranberry juice to a boil in pan, and cook until reduced to 1/3 cup (about 8 minutes). Pour wine mixture into a medium bowl; add shallots, lemon juice, salt, and pepper. Gradually add oil, stirring with a whisk.

3. Combine cranberries, greens, apple, and onion in a large bowl. Drizzle dressing over salad; toss gently to coat. Sprinkle with toasted walnuts.

3 Tbsp. pomegranate juice
2 Tbsp. red wine vinegar
1 Tbsp. honey
Salt and freshly ground black pepper
1/4 cup olive oil (or grapeseed oil -- not extra virgin)

Place pomegranate juice, vinegar, honey, 1/2 teaspoon salt and 1/8 teaspoon pepper in a small mixing bowl. While whisking, drizzle in the oil in a steady stream until blended.

8 ounces extra virgin olive oil
4 ounces The Perfect Purie Positively Pomegranate -- thawed
1 medium shallot -- finely minced
2 teaspoons kosher salt
1/4 teaspoon ground black pepper

Combine ingredients in a bowl or squeeze bottle and whisk to emulsify.

Whisk or shake bottle before use.
Don't wait too long to tell someone you love them.
