I am looking for instructions how to can/bottle/pickle/preserve jalepenos. Can someone lead me to a useful book or place?

Hi, Andy. Welcome to the forum. I haven't pickled jalepenos myself, but it sounds like a great idea. In our garden, the jalapeno is producing the best so we have lots to work with.

I Googled "recipe pickled jalepeno" and made it to this link http://www.cooks.com/rec/search/0,1-0,pickled_jalapeno_peppers,FF.html
that has several versions.

If you try any of the recipies out, please report back.

Here's a recipe, sub jalapenos for the habs.

Pickled Habaneros

2 sterilized pint jars
habaneros about 3 dozen
3 cups 4-5 percent distilled vinager (I use pickling vinegar)
3 cups water
1 1/2 Tbsp pickling salt

Poke a hole in the top of each chile and pack them tightly in the jars leaving 1/4 inch head space
Combine water,vinager,salt. Bring to a boil
Pour over chiles. Remove air bubbles, and re-adjust head space if necessary.
Store for to 6 weeks before serving

You can process these or just store them in the refrigerator, they should keep for 3 or 4 months. ( I process mine in a hot water bath).
