First, here is a picture of what we've cleaned already, still have a 13 gallon garbage bag to go. Jack & Florence offered baby spinach, but we said we'd rather have the more mature stuff still in the field. He just said take all you want. They'd already disced in a bunch of spinach and arugula before we got out there.
Cilantro, we'd already cleaned about 2 pounds.

Creamed Garlic Spinach

2 pounds fresh spinach
2 tablespoons unsalted butter
1/4 cup finely chopped shallots
1 tablespoon *minced garlic
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
1/2 cup heavy cream
Bring a pot of salted waer to a boil over medium-high heat. Add the spinach and cook for 10-15 seconds. Drain in a fine mesh strainer, pressing with a large spoon to release as much water as possible or squeeze with your hand. Finely chop (if desired) and set aside.
Melt the butter in medium saute pan over medium-high heat. Add the shallots and garlic and cook, stirring, until soft and fragrant, about 2 minutes. Add the spinach and cook, stirring, just until the liquid is released. Add the cream, salt, pepper, and netmeg, and cook until the cream is reduced by half, about 4 minutes. Remove from the heat and serve immediately.
*Depends on who I'm making this for as to how much garlic I use. A shorter method is to just use the spinach, butter, garlic, heavy cream salt and pepper to taste.
