Hi mj, sorry I can't remember the name of those books either, but I think it was PJ that ordered them, and Jean that made the suggestion. So, not to worry, because they will be along shortly. Great books from what they were saying.

Here ya go, mjk, got this suggestion from Jean.
Secrets from a Caterer's Kitchen by Nicole Aloni. She also wrote Cooking for Company, which is a cookbook. The first one is a guide/ reference/ w/some recipes.
Very useful info, thanks again, Jean for the referral.
Amazon new and used has them cheap, I didn't pay much at all for them. Hope this helps!

Here's a quick glance at some recipes.
Risotto Dolce scented w/ Cardamom and Orange
Black and White Chocolate Terrine
Tahini lemon vinaigrette
Pork tenderloin w/fig sauce
Salmon, lamb and beef Wellingtons
5 Sea Creature Stew
Gingerita
Braised short ribs w/mushroom thyme sauce
Turkish spiced chickpeas
Most of the recipes are basics, or take offs on them, but I still think everyone can find something useful here. Especially at “new and used” prices! (Shipping is $3.50, but gas is pretty close, so it’s a bargain

Welcome to the forum!! Have you checked out the catering book by Nicole Aloni which we talked about above?? It is a very handy book and I kept it close when I had my catering business going.
You have a beautiful site, but unfortunately this ignorant Norwegian only speaks/reads English, so I can't fully appreciate it!
