Cream of Artichoke soup. My niece just has some at McMennamens (or what ever the he.. it's called) and said it was marvelous...could I please find one for her? I figured with the variety of tastes we have here, someone would more than likely have one.

Billy, here is one I copied from 'the other site' quite a while ago - I don't recognize the poster's name and I've not tried this. It does look good tho and I just may have to now that I've looked at it again. May be a start for you.

Jim Coleman’s Artichoke and Pine Nut Soup

Ingredients:

4 fresh artichokes (1/2 cup frozen hearts)
1/2 yellow onion, finely chopped
2 celery stalks, finely chopped
3 tablespoons olive oil
3 tablespoons brandy
4 cups chicken stock
1 medium potato, peeled and coarsely chopped
2 teaspoons dried tarragon
1/2 cup heavy cream
salt and white pepper to taste
1/4 cup toasted pine nuts

Preparation:

With each artichoke, about 1/4 of the way down, cut off the top of the artichoke. Trim off the outer tougher leaves until you get to the tender inside ones. Open up the center of the artichoke and remove the prickly core. Cut each artichoke into 6ths.

In a large saucepot, over medium-high heat, heat the oil and sauté the artichokes, onion and celery until golden about 4 to 5 minutes. Deglaze with brandy.

Add the chicken stock, potato, tarragon and cream. Continue cooking until potatoes and artichokes are tender and soup has thickened. About 30-40 minutes.

In a food processor or blender, purée the soup in batches and strain back into a saucepan. Season with salt and white pepper and reheat until hot. Serve in soup bowls and top with roasted pine nuts.

That makes three different recipes I have now Jean. Two were from Epicurious. She can have her choice now. I like artichokes [pickled ones], but not sure I'd like them in soup. If you want I can email you the other two.

Artichoke Soup

Amount Measure Ingredient -- Preparation Method

20 fresh artichokes
2 tablespoons kosher salt
3 lemons -- sliced
2 fluid ounces olive oil
1/2 cup celery -- small dice
1/2 cup leeks -- small dice
1 cup white onions -- small dice
1/2 cup shallots -- small dice
1 tablespoon garlic -- minced
1 bay leaf
1 quart vegetable stock
salt and pepper -- to taste
5 ounces truffles -- sliced
opal basil oil

Simmer the artichokes in salted lemon water until tender. Remove them from
the water and cool in an ice bath. Peel away the leaves. Remove the hearts
and bottoms and dice them.

In a soup pot, heat the olive oil and add the celery, leeks, onions,
shallots and garlic and sauté until tender.

Add the diced artichokes, bay leaf and stock and simmer for approximately
45 minutes.

Remove from the heat, remove the bay leaf, purée the soup in a blender and
strain through a chinois.

Adjust the seasonings with salt and pepper and adjust the consistency with
additional stock if necessary.

Pour the soup into hot soup bowls. Garnish with sliced truffles and Opal
Basil Oil and serve.
