I made these from issue 57 June '06 this morning. The kids absolutely devoured them! They were good. We only made the pancakes and the strawberry sauce. Not the Candied Graham Craker crumbs or the sweetened Sour Cream. That just seemed like it would be over the top.

And with the cottage Cheese, there was a little extra protien in them. You can fool yourself they are better for you!

Strawberry “Cheesecake” Pancakes
(Cuisine at home, June 2006, Issue 57, p. 34)
Makes: 8 Pancakes (can be doubled) Total Time: 50 Minutes with toppings Rating: Easy

For the Fresh Strawberry Sauce—
Combine:
4 cups fresh strawberries, hulled, halved
1/4 cup sugar
1/4 cup water
1 t. cornstarch
1 t. orange zest, minced

For the Candied Graham Cracker Crumbs—
Melt and Add:
4 T. unsalted butter
1 cup graham crackers, crushed (4–5 crackers)
2 T. sugar
1/2 t. ground cinnamon
Pinch of salt

For the Sweetened Sour Cream—
Whisk Together:
1 cup light sour cream
1/4 cup powdered sugar

For the Pancakes—
Whisk Together:
1/2 cup skim milk
1/4 cup sugar
1 egg white
2 T. unsalted butter, melted
1 t. vanilla extract

Combine:
1 cup all-purpose flour
1 t. baking powder
1/4 t. table salt
1/2 cup small curd 2% cottage cheese
1 t. lemon zest, minced

Preheat oven to 200°; heat an electric pancake griddle to 375°. (If you don’t have an electric griddle, heat a stovetop griddle or large skillet over medium heat.)

Combine all ingredients for the sauce in a large saucepan. Bring to a boil, reduce heat, and simmer 7 minutes, or until strawberries soften; set aside.

Melt butter for the crumbs in a small skillet over medium heat. Add remaining ingredients and cook until toasted, stirring often, about 5 minutes; set aside.

Whisk together sour cream and powdered sugar, then chill.

Whisk milk, sugar, egg white, butter, and vanilla together in a large bowl.

Combine flour, baking powder, and salt in a small bowl, then add to the egg mixture; stir just until incorporated (a few lumps are fine). Blend in cottage cheese and zest. Pour 1/3 cup batter per pancake onto the hot griddle that’s been coated with nonstick spray. Cook 3 minutes, or until bubbly on top, then flip and cook another 2 minutes. Transfer pancakes to the oven to keep warm while cooking the remaining batter. Serve with sauce, cracker crumbs, and sour cream.

The pancakes are ready to turn when bubbles appear on top. Flip and cook a couple of minutes more.

Cook 3 minutes, or until bubbley on top, flip and cook another 2 minutes.
Serve with fresh strawberry sauce and sweetend sour cream if desired.

Sweetened Sour Cream: Wisk together 1 cup sour cream and 1/4 cup powdered
sugar. Chill. Also good over granola or fresh fruit.

Erin, don't feel guilty about asking. Among all of us we probably have most of the recipes typed somewhere, but if we don't, getting it from the archives is an easy process. Don't sweat the small stuff my friend. Now, if you wanted ALL the recipes in the archives, that might be something to feel guilty about
