Does anyone have a copy of the recipe that was sent out by email a week or so ago that was a tarragon chicken with mushrooms? I accidentally erased it and didn't get a chance to try it. Any help would be greatly appreciated! --Thanks

Here you go. This in by no means a low cal dish - but it is wonderful! We love it.

Taragon Cream Chicken

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 each chicken breast, no skin, no bone, R-T-C
1/2 cup flour, all-purpose
2 tablespoons olive oil
8 ounces mushrooms
1 cup white wine
1 cup heavy cream
2 teaspoons fresh tarragon -- minced
1 teaspoon cider vinegar
4 slices French bread -- toasted
2 bags fresh spinach

Season chicken with salt and pepper. Dust with flour and shake off
excess.

saute chicken in olive oil over medium high heat in a saute pan coted with
nonstick cooking spray. Cook until lightly browned onboth sides 5-7
minutes total(needs more if thick). Set aside and keep warm.

Add mushrooms and cook until softend and begining to brown, 2-3 minutes.


Add wine (or chicken broth) and heavy cream

Return chicken to pan. Reduce heat andsimmer util sauce thickens
sligtly, about 8 minutes.

Stir in tarrago and vinegar. Cook one minute

While Sauce is reducing, toast thick slices of crusty bread. And wilt
spinach in a pan with a little water.

serve spinach and bread on a plate with the chicken, mushrooms and sauce
over the top.

How did I miss this recipe? Sounds great, and a good use for my fresh tarragon!!!

It's ok Jean, when we were going to Colorado, Billy sent me a map. Colorado was NOT where I thought it was!!! Actually, neither was Wyoming, and a bunch of other states!!
