O.K., Ron has lots of burger in the freezer and I'm a little old lady on Social Security, so....let's bring back our favorite hamburger recipes from long, long ago and put them on the front burner!!!
Here goes -
HAMBURGER SOUP - LORRAINE
Recipe by: (Lorraine/Ambassador) Toronto
(a recipe from Share a Recipe Cookbook)
1 1/2 lbs hamburger meat
1 med onion, chopped
2 8-oz. can tomato sauce
2 c water
2 can consomme
1 can tomato soup
4 carrots, chopped
2 bay leaves
4 celery stalks, chopped
1/2 tsp dried thyme
8 Tbsps barley, or 1/2 cup raw rice
Brown the meat and onions; drain well.
Combine all ingredients in a large pot, and simmer 2 hours or all day.
Description:
"My mother used to make a version of this to feed all of us 7 kids."
NOTES : You can substitute canned tomatoes for the sauce, which is what I normally do. If you don't have the consomme, add water instead.
If you don't have the soup, leave it out. It's a very forgiving soup. You can add cabbage, broccoli, cauliflower, zucchini...anything that is in the fridge.
This is still a favorite in our house.
