Reuben Hush Puppies with Swiss Cheese
Yield: 24

1/2 cup whole or 2% milk
1/3 cup all-purpose flour
1/4 cup yellow cornmeal
1/2 cup scallions, thinly sliced
1 egg
2 Tablespoons sauerkraut juice or dill pickle juice
2 teaspoons baking powder
2 teaspoons dry mustard
1/2 teaspoon kosher salt
1/2 teaspoon sugar
1/2 teaspoon cayenne
1/4 teaspoon baking soda
1. Heat to 350 degrees: peanut or vegetable oil, 3" deep
Stuff with and fry: 24 cubes Swiss cheese (1/2" chunks"
Serve with purchased 1000 Island dressing
2. Combine all ingredients (except oil, cheese, and dressing) in a bowl. Cover and chill batter for 15 minutes.
Heat oil to 350 degrees in a saucepan over medium heat. Oil must be 3" deep.
Stuff a cube of cheese into 1 T. batter. Fry in oil in batches until brown, crisp, and cooked through, 3-4 minutes, turning often; drain on paper towels. Serve with dressing for dipping.
Tip: Use a small scoop or a tablespoon measure to portion out the batter.
