Several years we had a local packing house do a young milk and grass fed calf for us ( a form of veal, but raised in pasture with mama). I asked if they could do some scallopini--they said, sure!! The packages came back labeled "scarpini"--this is rural Texas after all!! They were cut right too, but at first we didn't know what we were getting!!
