Re: (...)
Well, my onions are finaly getting a sweet taste and I'm getting ready to make the Splendid Soup version of French Onion Soup!!
I don't have Gruyere cheese and no desire to travel an hour in this freezing rain, to the nearest place that MIGHT have some. But we did get a few different cheeses for Christmas. What would work in place of Gruyere?

I would think that Swiss would be a reasonably good substitution.
OR:
Gruyere = Gruyère Pronunciation: grew-YARE Notes: Gruyères are excellent melting cheeses, and they're commonly used to make fondues, soufflés, gratins, and hot sandwiches. Varieties include Swiss Gruyère, Beaufort, and Comté. Substitutes: Emmentaler OR Jarlsberg OR Appenzell OR raclette OR Swiss cheese

Jarlsberg works as well.
Practice safe lunch. Use a condiment.

I think every cheese mentioned would be wonderful - even a cheddar would be tasty!
Raclette????? Oh my, hadn't thot of that and I have some more pcs in the freezer from the 6 pounder we got at Christmas. That's what I'll sure use.
