They were on sale at my market for $1/ea so I got 2. I was reading on another site and that darned Billy Cotton had the best idea.
Billy: 'I have a Spaghetti with Walnut Sauce recipe if anyone is interested. If you want me to post it, send me a PM please.'
I'm dying to try the sauce on my squash. I can't tell you how versital versitle? (sp) that sauce is. Next time I'll print Billy's email out in the 50 font so I get it right.
Any other suggestions? Two squash will make 4 meals for me.

Jan, I've used that sauce with spaghetti. The 800 lb gorilla doesn't like tomato sauces of any kind, so in the past, I'd mix Cream of Mushroom soup and Cheese soup together and serve over the spaghetti; but, since he liked the Walnut sauce so much, I've been using that on occasion. I've also used it on pasta as a side dish. Never tried it on Spaghetti Squash though..it's certainly an idea.

Excuse this if it's dumb, but are we talking about the walnut sauce from the pork and pablano recipe. If not would you post it (not in 50 please)
Sounds like it'd work good over Ouzo too, duh I mean Orzo

Yes, the same sauce:
This recipe goes with Pork-Stuffed Poblanos With Walnut Cream Sauce
1 (3-ounce) package cream cheese, softened
1/2 cup walnuts, toasted
1/2 cup sour cream
1/4 cup milk
1 teaspoon ground cinnamon
1/2 teaspoon ground red pepper
1/2 teaspoon sugar
1/4 teaspoon salt
Process all ingredients in a food processor or blender until smooth, stopping to scrape down sides.
Yield: Makes 1 1/2 cups

Yes, we are talking about THAT Walnut sauce. There's another sauce I use frequently, the Gruyere sauce Lorraine posted. If you don't have it, I'll look it up and post it.

I know that I have made spaghetti squash once and enjoyed the recipe---darned if I can find it BUT I'll keep trying. This is one of those products that show up occasionally in the market and then never to be seen again. Interesting squash though.

My favorite way w/Spaghetti Squash is to just bake it and serve it with a little butter, salt and lots of pepper. Maybe a little sprinkle of cheese.
If I have a tad of marinara sauce in the fridge, I'll top it with that also.
