Mystery Bread

Amount Measure Ingredient -- Preparation Method

2 teaspoons salt
1/2 cup cornmeal
2 tablespoons butter
1/2 cup maple syrup
1/2 teaspoon whole celery seeds
1 tablespoon Hungarian sweet paprika
2 cups boiling water
2 tablespoons yeast
3 cups unbleached flour
2 cups flour
In a roomy bowl, combine the salt, cornmeal, butter, maple syrup, celery seed and paprika. Add the boiling water. Mix well and let cool to lukewarm. Sprinkle with yeast. Stir in the unbleached flour, beat hard, then add the flour. Turn out and knead for 5 minutes. Let rise for 45 minutes. Knead down and shape into 2 loaves. Let rise in 2 greased loaf pans until the dough reaches the edges of the pans [about 45 minutes]. Bake at 375°F for 30 minutes. Let cool.
Note: If you are using a bread machine, half the recipe, use tepid water first, adding the flour with yeast sprinkled over it last, as per standard bread machine instructions.
