I have a few bananas that are really really over the hill.
ANybody would like to share their moist VERY MOIST Banana Cake recipe?...muffins would be good too.

compiled by the Women's Missionary Council and Young Women for Christ Boulevard Assembly of God Church...(a gift from my grandma in 1985)
Banana Nut Bread
3 ripe bananas
2 c. flour
2 eggs
1/2 c. butter
1 c. sugar
1 tsp. soda
pinch of salt
1 c. pecans
Cream butter and sugar in mixer then add eggs and mashed bananas. Mix well. Sift together flour, soda and salt. Add the dry mixture to the bananas, butter and eggs slowly and mix well. Add chopped pecans. Bake at 350 degrees for 50 minutes in greased, floured loaf pans. This bread will stay fresh for weeks when wrapped in foil. (however IMHO,...if it's not eaten in a day, there's something wrong with you...LOL!!!!) Is also freezes very well. I double this at Christmas and it will make about 6 small loaves.

Here's an idea that I have not tried yet, but...it's from a gal who recipes have always worked for me, so I'm not hesitating posting it.
SOUR CREAM BANANA BREAD - KIMBERLYK
"This is my favorite. Just made some this weekend. It makes a lot so there's enough for you to enjoy and freeze some to give away during Christmas. It is very moist and yummy!
If you don't have sour cream you can use plain yogurt."
3/4 cup butter
3 cups sugar
3 large eggs
6 very very ripe bananas
1/2 teaspoon salt
4 1/2 cups all-purpose flour
3 teaspoons baking soda
1 (16-oz) container sour cream
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1 cup chopped nuts, optional
Preheat oven to 300 degrees. Grease four 7x3-inch loaf pans.
In large bowl, cream butter and sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Add salt, baking soda and flour and mix well. Stir in nuts. Divide batter into prepared pans. Bake for 1 hour or until a toothpick inserted in center comes out clean.
Makes 4 7x3 inch loaves.
NOTES: The sour cream makes this bread so moist it almost melts in your mouth. Fat free sour cream works well, too! Loaves freeze well.

Banana Sour Cream Waffles
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup flour
1/2 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg -- separated
1 cup sour cream
1/4 cup milk
1/4 cup melted butter
1 banana -- mashed
Sift together dry ingredients. Set aside. Mix together beaten egg yolk, sour cream, milk, butter and banana. Add to flour mixture, mixing well. Fold in whipped egg white, and pour into oiled waffle iron or oiled pan. Cook each side until brown.
Another thing I do with growing old bananas is to put as is in freezer (or you can peel them first and pkg.) and use frozen in smoothies. YUM.

Here is my very favorite Banana recipe. I have yet to be able to frost it since it's gone soon after I take it from the oven.....

1/2 cup shortening..(can be liquid oil or bu
1 1/2 cups sugar
2 large eggs
1 cup mashed bananas
4 T sour milk (I use 3 T milk and 1 T vinegar
1 t soda
1 t baking powder
2 cups flour
1 pinch salt
1 cup nuts (optional)
Preheat oven to 350F.
Mix all together..Bake in a lightly greased rectangular cake pan (I usually use a pyrex lasagna pan) for about 30 minutes or use the ole' toothpick method.
I frost it with a cream/butter/powdered sugar conglomerate! - - - - - - - - - - - - - - - - - - -
NOTES : This recipe is sooooooooooo good, that if you haven't made it you are depriving yourself and your family. I don't even frost it, there is no need. A BIG thank you to SugarBrown for posting it
