Lemonade-Strawberry Floats - recipe adapted from A Passion for Ice Cream by Emily Luchetti

Mascarpone Ice Cream

4 large egg yolks
3/4 cup granulated pure cane sugar
1/8 teaspoon Kosher salt
2 cups whole milk
1 1/2 cups heavy whipping cream
1/2 vanilla bean , then split down the middle with seeds scraped out (or 2 teaspoons pure vanilla extract)
1 cup Mascarpone cheese (room temp)

1 cup minus 1 tablespoon freshly squeezed lemon juice
1 cup granulated pure can sugar
1/8 teaspoon Kosher salt
5 cups cold seltzer water
1 1/2 cups chopped fresh strawberries

Ice Cream:
In a bowl, whisk yolks, 1/4 cup of sugar, and the salt.
Cook cream and milk with vanilla bean and seeds with remaining 1/2 cup sugar over medium heat.
Stir occasionally and bring almost to simmer. (Once I see small bubbles around edge of pan I stop.)
Slowly add heated liquid to sugar/egg mixture while whisking constantly.
Return mixture to the saucepan.
Cook over medium low heat stirring with wooden spoon until custard reaches 175* (mixture will lightly coat the spoon).

Strain custard into clean bowl and discard vanilla bean. (I rinse bean quickly and allow to dry then use to flavor sugar).
Cool custard to room temperature.
Whisk in Mascarpone cheese.
If using vanilla extract this is where you add it.
Refrigerate custard at least 4 hours, or overnight, covered.

Churn base in machine according to manufacturer's directions.
Freeze until scoopable ~ 4 hours.

To serve:
In large pitcher combine the lemon juice, sugar, and salt. Stir to dissolve.
(I heat this to dissolve and then place in fridge overnight.)
Stir in Seltzer water.
Add strawberries to bottom of 8 glasses.
Add Lemon/Seltzer water to 3/4 full.
Top with ice cream and garnish with strawberry slice.

This is a wonderful book and this particular recipe is awesome!

My DH, son and his girlfriend loved this recipe! It was a perfect ending to a light dinner with temps outside at 90* at 7:30 that evening.
