Bill's Creamed Chicken & Biscuits

Recipe By :Bill Cotton
Serving Size : 8 Preparation Time :0:10
Categories : Poultry

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 large onion -- chopped
2 large russet potatoes -- peeled & cubed
3 cups frozen mixed vegetables* -- thawed
1 cup celery -- chopped
1 teaspoon minced garlic
1 1/2 teaspoons butter
1 whole chicken -- cooked & shredded
1 teaspoon poultry seasoning, sage or rosemary
1/2 teaspoon salt and pepper -- to taste
2 cans cream of chicken soup -- undiluted
2 cans cream of mushroom soup -- undiluted
1 can cheddar cheese soup -- undiluted
1 cup sour cream
1 1/2 cups milk
1/2 cup pimiento* -- chopped
2 cans Ortega green chiles* -- chopped
2 cans refrigerated biscuits

*NOTE: I use a carrot, corn and green bean mixture. Plus I cube 2 potatoes and blanch with the frozen veggies; drain well. The chiles and pimiento are optional, but good.

Preheat oven to 350F. Grease a 14.5- X 10.5-inch baking dish.

Heat butter in a nonstick skillet over medium-high heat until melted. Saute the onion, celery and garlic until tender.

Combine onion, chicken, soups, seasonings, salt and black pepper, sour cream, milk, carrot, corn, potatoes, peas, chiles and pimiento in a large bowl and mix well; microwave for approximately 4 minutes to warm; mix again. Adjust seasoning. Spoon mixture into prepared baking dish. Place baking dish on a cookie sheet and bake for 20 minutes. Remove from oven.

Distribute biscuits over the top of the casserole in a single layer. Bake until biscuits are golden brown and the sauce is bubbly, about 20 minutes.
Don't wait too long to tell someone you love them.

ROTFLMAO. You bad Billy, very very very bad. That jolly yard arm, hard to keep it in place. Bubbles at breakfast, pink gin before lunch, a spot before dinner, a nightcap after. No wonder the British lost their Empire. Of course, we are very pure here. (snigger)
