It's going to be a hot one today, time to fire up the grill. From one of the Cuisine at Home's grilling cook books, I'm making Coconut Marinated Chicken Skewers with Pineapple Rice. The rice was one of Jean's favorites.

That sounds good.
We had a Spring greens salad with "planned over" sliced hanger steak and asparagus with an Asian Dressing recipe that I absolutely LOVE. I don't know where I got it, especially since I couldn't find the same recipe anywhere.
I will post it here so that I can find it again.
Better'n Bottled Asian Dressing (my name for it)
1/2 c. Olive Oil
1/4 c. Balsamic Vinegar
2 TBS Soy (I used Coconut Aminos)
2 Cloves of Garlic, chopped
2 TBS Ginger, chopped
2 TBS Honey
2 TBS Water
1 tsp Sesame oil
Whisk all ingredients together until blended. (I used my immersion blender)

Me too! Blane, your photos are drool worthy! I remember that recipe, too! It was another dinner review that we all loved. Time to make that again.
I had dibs and dabs to use, so made a mini lasagna in a bread pan, similar to the one in Cooking for Two, only minus the meatballs because I was using a meat sauce and ricotta that was l/o from another project for spinach and ricotta gnocchi. Those were put into the freezer for another day.
For anyone who has never made gnocchi, they are really easy to make, especially the spinach and ricotta recipe. We like that one because they are not heavy like the one made with potatoes.
