What's for dinner today?? 

I've got a humongous Acorn Squash to use and I want to try the 'already' cooked pasta Tracie sent us for a snack later.

Last night was calamari steaks in a lemon egg batter, roasted parm. squash, and fresh lemon pepper pasta. Yummmm.

It's right here Jean:  Chicken Enchilada Stuffed Acorn Squash  This is absolutely to die for good.  In fact it's about time to make it again.

How funny! I have Chicken Enchilada stew in the freezer - all I need is to add a sprinkling of cilantro and I'm good to go. Thanks for the idea, Sharon. Smile

Sharon, a few of us made that recipe after you shared it a while back. It was really good!

We are going to have some grilled salmon, risotto, and asparagus. Watermelon for dessert.

As of this moment I am making pork enchiladas, and something with pinto beans and hominy.  I dug in the freezer and found some cochinita pibil and some carnitas.  I've got some green enchilada sauce and cheese.  It should be easy.  Of course plans could change . . .  Confused
You only live once . . . but if you do it right once should be enough!
