Monday's Dinner, 5/8/17??

What's for dinner today?

Freezer diving time for us for a few days. But, I do have a project for today -  a neighbor brought over a gallon of goat's milk fresh on Saturday, so goat cheese in our future.

Eating out again! I'm sure going to need to do some damage control after today!

One of my cousins (who I have only ever met once in my life) is coming into town this afternoon. Tomorrow, she has a consult with a surgeon at the Cleveland Clinic, then on Tuesday, she is leaving. Since we're all pretty tired from our big weekend party, my dad suggested we take her out for dinner. So, we're thinking of going to The Outback since we have no idea what she eats. That could change if she is a vegetarian.

It does sound like you'll have some damage control to take care of, Maryann. Haven't been to Outback for a long time - I used to love the rack of lamb.

We are having grilled bunless burgers and corn on the cob for lunch, grilled teriyaki thighs and steamed vegetables for dinner.

I need to go through the Grilling Book for some new ideas.  But Teriyaki thighs sound good, so that may go on the menu this week. Thanks for the idea, Trixxee!  And steamed instead of grilled veggies sound like a plan for a change.

Since I didn't have any fresh grilling ideas, I decided to make up a batch of spaghetti sauce.  I need to pick up my spiralizer next trip home.  Tonight I'll have to just use up a half box of linguine.

Have fun, Maryann!

Welcome!  I love steamed carrots and broccoli so I do a lot of steaming.
Have a nice dinner at Outback, MA.  I have $300 in gift cards for there and we just don't seem to get there!

Thank you, T. We had a really nice time. I really like the Outback. The one by us has a fantastic manager with a staff that loves him, so everyone in the place does such a good job. We have never had a bad meal there. And, it's easy to low carb if I can stay out of the bread basket and the bloomin' onion!

Tuesday's Dinner, 5/9/17??

What's for dinner today?

We're still working on the freezer - although if my goat cheese turns out today, maybe something using it.

Jean's birthday dinner today. Ron did not care for couscous, so I will be making the side dish with rice and asparagus and let him review it.

Tony won't be home and Michael has leftovers so I've got an easy night.  Will probably saute a chicken breast and steam some more vegetables.  How exciting!  LOL.
