Not 100% sure what day we're having what, but probably tonight or tomorrow I want to make a grilled pork tenderloin medallions recipe - asian flavors.  Would serve over sauteed cabbage or broccoli slaw.

Oh, this one is a keeper - Spicy Peanut Butter Sauced BLT Pizza -
w/ cherry tomatoes, Comte cheese, basil, shredded cabbage

And, a new hint for pizza baking, when you have to do it in the oven. I moved the oven rack to the highest level and with the heat rising, look how nicely it browns the crust. Much better than baking on the lowest level rack. and the bottom browns also. Smile

After a frantic day, I had a frustrating evening.  I have GOT to figure out how to post pictures on here from my library!  I did it once!  

Anyway, after hours of trying to manipulate Photobucket, I finally managed to load pictures of our lunch!  We have been neglecting an old favorite and one of my mother's weekly lunch spots.  She asked me to replicate their Tomato Feta Soup years ago.  Today, I finally figured out why I failed.  The feta is not a garnish.  There is a LOT of it cooked into the soup!  It is only served on Monday, so I finally got to try it today.  They have a half sandwich and cup of soup special every day.  I had already tried their ham and cheese two weeks ago, so I went with that. William chose one of today's sandwich specials, the Rueben Melt.

A side note, we have known John and Sheila from before they opened Dry Street.  We are even friends with John's mother.  And their son, "Mickie" grew up with Ashley and Andrew.  His full time babysitter was our next door neighbor and babysitter for our kids.  "Mickie" is now the head chef.

Another happy reunion with old friends.

Dinner was supposed to be Taco Salad, but after defrosting the "taco meat" and refried beans, I discovered the "taco meat" was leftover enchilada sauce.  So that is tomorrow night's dinner.  I finally pulled some lasagna soup out of the freezer.

Congrats on overcoming Photobucket and posting pictures!!! Tomato & feta soups sounds so good. How funny, just looked thinking I had a recipe for this and look what I found -

SOUP - Tomato Soup With Feta Cheese Recipe - Daphne's Uncle

"This is a very simple soup to make. It has a nice rich color and a lively flavor. Serve it with grilled pita bread cut into wedges for dipping. Grilled garlic bread is another great dipper, or Italian bread brushed with extra virgin olive oil and
lightly"

2 Tbs extra virgin olive oil
2 cloves garlic -- chopped small
1 medium onion -- chopped small
2 Tbs all-purpose flour
1 Tbs tomato paste
2 cups chicken broth
28 oz diced tomatoes -- canned or crush your own
1/4 cup oregano -- chopped fresh
1/16 tsp granulated sugar
1/2 tsp salt
1/4 tsp black pepper
1/2 cup crumbled feta cheese

1. In a large saucepan, heat olive oil over medium heat. Add garlic and onion and sauté' until very tender, about 5 minutes.

2. Mix in flour and tomato paste; stir well and cook for 1 to 2 minutes, stirring slowly constantly. Pour in stock and mix well.

3. Add tomatoes including liquid, oregano and sugar and simmer for 12 to 15 minutes, stirring occasionally.

4. Puree' the soup mixture in batches in a food processor or blender until smooth, then return to the saucepan. Bring back to simmer. Season with salt and pepper or to taste.

5. When serving, sprinkle some feta cheese on top as a garnish. If you are using fresh oregano, save some to sprinkle on top of the soup as a garnish. Serve Hot.

Maybe adding the feta towards the end of step 3 would work?? Maybe not by measurement, but by taste?? Sounds like something to be tried Smile

Run around day for me, so grabbing a couple pkgs out of the freezer.

All the pictures look so great.  Haven't had anything like pizza or a hot melty sandwich in a while.

I think tonight we're doing some type of grilled chicken with mexican flavors, a side of pinto beans and side salad with iceberg, cucumber, tomato, croutons (haven't even had a crouton in a while) and a creamy cilantro dressing.

I'm pretty fast.  ;Wink I did just have a great "double single" protein style burger (no bun, wrapped in lettuce) at In n Out.  Gosh their burgers are so good and they're not overly huge.  Just right.

I have not cooked for two days now. Blush Yesterday, I took my dad to the VA hospital to see one of his docs, then we went to Chinatown for lunch and shopping at Asia Foods. I got home so late that I picked up a rotisseried chicken for Ron for dinner and he made a salad to go with that while waiting for me. Today, I was out goofing off with Holly all day. We went to the Hard Rock Casino for morning coffee and played a few slots, had lunch, then went back to the slots for a while. When I got home, Ron was making spaghetti and meatballs and a salad for dinner. I will want to be making something really good tomorrow night!
