Oooops! Almost forgot to ask - What's for dinner for everyone today???

More leftovers/fridge dibs and dabs today. Combined a lot of goodies and stuffed a huge Crookneck squash that hid in the garden.... Looks really good, hope it is.

It sure is, if only the menu items were a little bit healthier! But then, I figure all the laughter and good times are healthier than staying home.

After feeding my sourdough day before yesterday, I didn't have much leftover.... (don't ask ), so I made a half loaf of an old focaccia recipe I haven't made for a while. It's so easy, I don't know why I don't whip it up more often.

I'd forgotten how wonderful this recipe is. But, I did fudge a little - I added a 1/4 tsp. yeast and 1/2 tsp. enhancer...don't know why, but wow, it is so nice.


Sourdough Focaccia*****

1 1/3 cups of refreshed sourdough starter
1/4 cup oil (I use olive bit salad is ok)
2 tsp sugar
3/4 tsp salt
2 cups unbleached all-purpose flour
1 Tbs oil, for the top

1. Combine the the above ingredients, kneading in flour 1/2 cup at a time.
2. Let rise till double, punch down, and kneed a little to let the gases out.
3. Let the dough relax for 10 minutes or so .
4. Roll the dough into an oval about 9x6 and place on your favourite baking surface.
5. The dough should be about an inch thick.
6. Make dents all over the surface of the dough.
7. Pour on olive oil liberally and spread it all around. It will pool in the dents.
8. Top with herbs and spices, and possibly parmesan.
9. My favourite is fresh ground black pepper and coarsely ground salt,.
10. Let rise until double again, and bake at 450°F for 15 to 20 minutes, or until brown and sounds hollow when tapped on the bottom.
