What's on the menu for everyone today?

I'm thawing lamb chops to grill - not sure what else.

But, I'm still craving a pizza with the dry salami I picked up the other day....
Retired and having fun writing cookbooks, tasting wine and sharing recipes with all my friends.

I'm going to make Cuisine's Flounder Piccata and Lemon Spinach Orzo from issue #l03, except that I will be using cod instead of flounder.

Maryann - how hard would it be to post the orzo recipe? I can't seem to find that issue. Thanks! If not, don't worry about it.

I think Tony's having grilled mahi mahi and I'm having grilled shrimp. I think the orzo would go great!

Grilled marinated chicken and minted cucumber salad. Rice or rice noodles (can't decide!).

Trixxee, I found it on the DVD. Will type it up for you and be right back.

Sorry, got side-tracked for a bit. Here you go.

Lemon and Spinach Orzo
Servings: 4

3/4 cup onion -- chopped
1 tablespoon olive oil
1 tablespoon garlic -- minced
1 cup dry ozro pasta
1 cup low-sodium chicken broth -- hot
1 cup water -- hot
3 cups stemmed fresh baby spinach
2 Tablespoons lemon zest -- minced
1 Tablespoon unsalted butter
1 teaspoon each salt and black pepper (I would start with less pepper)
1/4 teaspoon freshly ground nutmeg

Saute onion in oil over medium-high heat until softened, 3 to 5 minutes. Add garlic and cook 1 minute until fragrant.

Add orzo, stir to coat with oil, and cook for 1 to 2 minutes. Add broth and water, stirring often until liquid is absorbed and orzo is cooked, 9 to 10 minutes.

Off heat, stir in spinach, butter, salt, pepper, zest and nutmeg. Stir until spinach wilts.

Thank you Maryann! I think I'm going to sub out green beans cut small on the bias, and add it to the orzo when I add the liquids. The bagged spinach was on it's last leg at the store and green beans looked good.

Looking forward to this!

I have a half bag of spinach that I think is still good. If so, I think I'll have this with our ribs Sunday instead of more corn on the cob.

Tonight we have a shrimp boil. Got home late AGAIN, but this is fast and easy.

Hope you liked it Trixxee. I'm sure it would be good with most vegetables. I do really like the bitter flavor of spinach and lemon in this dish though.

Had our first artichokes with grilled lamb chops yesterday!!

For our later snack -
Pizzadilla (Quesadilla Pizza) – easy and so tasty! I used what was called for, but added chopped dry salami along with a little cilantro with the basil. Took all of maybe 20 minutes.
