It all sounds so good!

Here's a few appys popular at work.

Curried chix salad w/ mango chutney, slivered almonds and sliced grapes on an endive leaf (yum)

Phyllo mini cups w/ pear, brie, honey, thyme a a drop of balsamic (This must have been popular some time back, it's in the Secrets of Catering book) Bake briefly to melt cheese.

Crisp rounds (toast) or crackers w/a lemony feta-cream cheese spread, piped, w/sliced Calamata, a sprinkle of minced red onion if so wanted, okay with me!

All easy and quick do-aheads, hold up well, room temp for service.

An oldie but goody-salmon cream cheese w/minced cuke, fresh dill and lemon juice on whatever's handy.

Reading this thread has made me want to throw a cocktail party

I've made the Peach Melbas from some summer C@H issue. (pureed peaches, rum, etc. with a raspberry swirl) Yum! And my favorite appy is bacon-wrapped dates stuffed with goat cheese. I think it originally came from the Queer Eye website...

Bacon-wrapped Dates stuffed with Almonds and Goat Cheese

24 large fresh dates
12 slices thin bacon, halved crosswise
2 ounces goat cheese
24 unsalted almonds, toasted

1. Preheat oven to 500° F.

2. Pit dates, tearing them open as little as possible. Set dates aside.

3. Roughly chop almonds and mix with goat cheese.

4. Stuff dates with goat cheese mixture and wrap dates with bacon.

5. Place dates on a baking sheet, seam side down, at least 1/2 inch apart. Bake until bacon is golden and crisp, 8-15 minutes. Drain on paper towels and set aside to cool briefly before serving.

Heaven knows where that came from Jenni - in the 70s we made that with cheddar cheese. Loved those little goodies.

Well, I sure didn't remember we just revisited this thread last June....can sure tell where my mind is a lot of the time....

Think it's time to try Cis's new summer concoction, such an elegant cocktail...

Erin may need a few of these ideas if her picnic gets washed out....

Might even spring for the non-diet if it does wash out, ya think??

Seriously, hope the weather holds for you, Erin!
