Not sure where to post this one - under eggplant 'desserts' or here.
Just saw this idea and it got rave reviews. As usual I wouldn't frost it, but then I never do with cakes/bars.

Jean, that is an interesting twist! The moisture the zucchini would add to the bars would make them super yummy! But I'd have to have that glaze!
Susan, I know what you mean about a veggie dinner. But I have found that William is happy from time to time if there is enough interesting flavor. It seems to be easier in summer when veggies are fresh and abundant!

I love anything with blueberries. As for eating vegetarian, Ron is slowly coming around also. It all started with Eggplant Parm. He loves it.
Here is a link to a favorite summer sandwich. I always remove the excess bread from the middle of a sub roll and use 1/2 slices of cheese. It helps cut a few calories.
