Feb. 17th and ideas for food abound!! This is going to be hard.
Wonder if it would be over-kill to have red beans & rice and cheesy grits on the same plate??????????
Some dishes I'm thinking of -
Crawfish pie
Louisiana Bayou Shrimp Fry
Sautéed Fresh Mushrooms
Fried Crawfish Salad (with Creole Mustard Dressing
)
I'd love to make a King Cake, but just too much trouble and big for the two of us....

We go to a monthly pot luck dinner. For Mardi Gras, we will do all the food, other than desserts, and folks will chip in to cover the cost of food. Here's the menu, most is vegetarian, as that's how this crowd is. We may also make individual King Cakes.
Gumbo Z’Herbes
Roux Based stew of mixed Greens
Tomato Okra Gumbo
Crushed Tomatoes and sliced Okra spiced with chilies and the trinity
Cajun Red Beans
Roux based, slow cooked Pinto Beans
Chili Cheese Grits
Creamy grits with cheddar cheese and green chilies
Smothered Cabbage
Sliced cabbage sautéed with onion and tomatoes then slow simmered
Corn Maque Chou
Cajun version of creamed corn
Creole Spinach Mousse
A cockeyed mashup of Rockefeller sauce, spanakopita, and quiche without a crust
Red Potato and Sweet Potato Medley
Diced Potatoes and Sweets, roasted with garlic, thyme and olive oil
Jambalaya
Rice and vegetables with sausage, pork, and seafood
Cajun Spiced Pork Loin with Pickled Cantaloupe Relish
Corn Muffins and Sweet Potato Biscuits

We love Mardi Gras and usually make muffalettas to share with the kiddies. Haven't decided what else to have just yet. Hmm....

I'll probably make Shrimp Étouffée, Maque Choux and for dessert New Orleans style bread pudding with coconut praline sauce.
