We have never made bread pudding. The recipe says you can do this two days ahead, but like many recipes is unclear as to whether you cook it and then reheat, or if you mix and refrigerate and cook just before serving. Suggestions? We are making this up tonight for a Derby party Saturday.

Where's the recipe?
Since you usually need to soak the mixture for a while, it should probably be refrigerated and then cooked when you will be using it. That would be my guess.
If blueberry muffins have blueberries in them, what do vegan muffins have?

You can certainly make it ahead then heat it. We did it for brunches all the time. The Inn zaps it, covered with a dampened paper towel, for about 30 seconds.
Practice safe lunch. Use a condiment.
