I saw this on Ina's show and salivated. I grill ribeye steaks on a regular basis. BBQ sauce will never, ever touch them. But I do like to put bleu cheese crumbles on top or a dab of a good compound butter, or dill sour cream with a hint of horse radish (Compliments of Sharon )

And then I saw this sauce on Ina's show and salivated -

Stilton Sauce:
4 ounces Stilton Cheese, crumbled
8 ounces Cream Cheese, at room temperature
½ cup Good Mayonnaise
½ cup Sour Cream
1 Tbsp Chopped Scallions, white and green parts
Kosher Salt And Freshly Ground Black Pepper
¼ tsp Worcestershire Sauce

Put cheese into food processor and pulse a few times to cream up, add all the remaining ingredients into a food processor and process till smooth and creamy.

In your Dill Sour Cream sauce do you use Dill seeds or crushed Dill?

I use fresh dill and dried dill, no seeds. The fresh dill gives you a milder flavor, so I add the dried to bump of the flavor.

Yum!! Steaks with bleu cheese is on my short list... I may have to try Ina's Stilton Sauce...
