Have you checked out the current issue of Food and Wine? (Oct)
They have lots of really yummy beet dishes! When I saw this issue I knew it was meant for you. I have about 4 marked to make. 
Mine came just before we left, but haven't looked at it yet. Hope there are some to play with with the beets I froze before we left.
